I tried baking a coffee cake the other day. It looked perfect when I took it out of the oven. I left it to cool for 5 mins and when I came back it had shrunk! I'vew made this recipe times without number and it has never done this before! Aiya.. well I turned it out of the cake tin and left it to cool completely. Then I had to get dinner, have dinner, get Sophie to bed and finally came back to the kitchen to wash and clear up. I found my poor cake had dried up! It was hard and crispy on the outside! I used to leave my cakes out for hours back home without any problems. Must be the lack of humidity here. Sigh.
